  1. 2 lb sausage crumbled
  2. 1T fennel seeds toasted/crushed w/ mortar & pestle
  3. 1T hot pepper flakes
  4. 1 red onion finely chopped
  5. 1 fennel bulb trimmed cored finely chopped
  6. 1 carrot fine dice
  7. 1 rib celery fine dice
  8. 4 c garlic thin slice
  9. Crushed toms
  10. Fresh thyme
  11. Pecorino cheese
  12. Cook sausage rendering fat
  13. Add everything but cheese and cook until well browned.
  14. Add sausage back in w/ tomatoes
  15. Simmer 20 min
  16. Serve w/ pasta & cheese
