2 lb sausage crumbled 1T fennel seeds toasted/crushed w/ mortar & pestle 1T hot pepper flakes 1 red onion finely chopped 1 fennel bulb trimmed cored finely chopped 1 carrot fine dice 1 rib celery fine dice 4 c garlic thin slice Crushed toms Fresh thyme Pecorino cheese Cook sausage rendering fat Add everything but cheese and cook until well browned. Add sausage back in w/ tomatoes Simmer 20 min Serve w/ pasta & cheese
