+## mustard à l'ancienne (Old Style Mustard)

+### INGREDIENTS
|
|
|

|
|
|
+- 50g yellow mustard seeds
|
|
|
+- 50g brown mustard seeds
|
|
|
+- 120ml white wine vinegar
|
|
|
+- 1-2T water
|
|
|
+- 1/2 lemons worth of juice
|
|
|
+- 1/2t salt
|
|
|
+- 1/4t pepper
|
|
|
+- 1/2t tumeric
|
|
|
+- 5T sunflower oil
|
|
|
+
|
|
|
+
|
|
|
+### PREPARATION
|

|
|
|
+mix yellow and brown seeds with 80ml vinegar let stand ~1 hour and it should start to bubble
|
|
|
+
|
|
|
+pound seeds, if it loses liquid add the water. do in small batches as the yellow will mash and the brown will crack
|
|
|
+
|
|
|
+add rest of ingredients except the oid
|
|
|
+
|
|
|
+put in a clean jar and top with oil
|
|
|
+
|
|
|
+let sit for 4 weeks
|
