+- tri Tip
|
|

+- rough cracked pepper

+- granulated garlic

|

+- 1 head garlic
|

+- 2 sticks butter
|

+### INSTRUCTIONS

+#### Morning of

|
|
|
|
+Trim fat and season both side liberally
|
|
|
|
+Put on a rack inside a sheet pan uncovered in the fridge
|
|
|
|

|
|
|
|
+#### Smoker
|
|
|
|

|
|
|
|
+Put the tri tip in the smoker at 225 and pull at 125
|
|
|
|
+While this is smoking for about 90 minutes - chop up the garlic and melt with the butter for searing
|
|
|
|

|
|
|
|
+#### Fire up grill super hot
|
|
|
|
+
|
|
|
|
+Grill for about 7 minutes on each side basting with the galic butter until the internal temperature is 135 degrees at the thickest part.
