Duck Breast Cooking Notes
Ingredients
duck breast
salt
5 spice powder
INSTRUCTIONS
Morning of
Dry duck breast carefully
Salt both side lightly
Put on a rack over a sheet pan uncovered in the fridge
2-3 Hours before
Score cross hatch pattern cutting through the fat layer but NOT into the meat
Season with 5 spice powder
Get Cooking
Preheat oven to 325
Place breasts skin side down in a cold pan
Press them down to ensure full contact with the pan
On medium low heat slowly render the fat with occasional pressure until it gets deep brown and crispy.
Flip over and place in the oven.
Cook until the internal temperature is 135
Rest on a cooling rack over a sheet pan for 10 minutes before slicing
