  1. SAUTEED SCALLOPS ON RED PEPPER SAUCE

  7. -----RED PEPPER SAUCE-----
  8. 1 sm Garlic clove
  9. - peeled and crushed
  10. 1 lg Red bell pepper -- peeled,
  11. - seeds & membranes removed
  12. 1 tb Non-fat plain yogurt
  13. 1 c Non-fat plain yogurt
  14. 1/4 c Torn fresh coriander leaves
  15. Freshly ground black pepper
  16. 1 tb Fruity olive oil
  17. -----FOR THE SCALLOPS-----
  18. Non-stick spray coating
  19. 1 t Olive oil
  20. 1 lb Sea scallops -- patted dry
  21. 2 tb Dry vermouth
  22. 2 tb Lemon juice
  23. Coriander leaves
  24. - for garnish
  25. TO MAKE THE SAUCE: Place the garlic, pepper and 1
  26. tablespoon of yogurt in the bowl of a food processor
  27. fitted with a steel blade, and puree until smooth.
  28. Scrape the mixture into a small bowl and stir in the
  29. remaining yogurt, coriander and black pepper. Whisk in
  30. the olive oil, then spoon the sauce onto plates,
  31. spreading it out with the back of a spoon. FOR THE
  32. SCALLOPS: Spray a medium-sized skillet with the
  33. non-stick coating. Add the olive oil, and heat until
  34. hot but not smoking. Add the scallops and quickly
  35. saute them over high heat until just cooked through,
  36. turning often, 2 to 3 minutes. Pour in the vermouth
  37. and let it almost evaporate, then add the lemon juice,
  38. cooking a few seconds longer so the scallops are
  39. glazed. Spoon them onto the plates with the sauce.
  40. Sprinkle a few coriander leaves on top and serve at
  41. once.
