Pulse carrots, onions, garlic until finely chopped in food processor
Add in fruit and chilis blend until paste
This one made 535g of paste so we added 2% by weight of salt - 11g - mix well
Trace around the base of the ball jar and cut out a piece of parchment.
Pour in mash, cover with parchment and fill a ziplock with a tiny bit of water and put over the parchment to keep it down tight.
Cover with the fermenation lids according to directions
Store in a cool dark place for a month
