Lamb Kabobs

INGREDIENTS

  • 1 lb lamb tips
  • 2 red peppers
  • 1/2 red onion
  • 3 c garlic paste
  • 1 t ginger paste
  • 3 T plain yogurt
  • 2 T tumeric
  • 1 t cumin
  • 4 T olive oil
  • 2 t celery salt
  • 1 lemon
  • handful of Italian parsley
  • handful of fingerling potatoes
  • salt and pepper

PREPARATION

Toss potatoes with a bit of olive oil to coat and microwave on high 4 minutes and let cool.

Soak skewers in water with a weight on top. Mix everything but lemon in a bowl and marinate for 2+ hours

Skewer and allow to come to room tempature, salt and pepper. Grill on indirect heat for 10 min, then direct heat for 5 minutes.

Serve over couscous or with rice.
