Pad Ka Prao

Ingredients

  • 1lb ground chicken thighs
  • 4 shallots - 3 rough chopped, 1 finely minced
  • 5 cloves garlic
  • 3Tbsp ginger, grated
  • 2c green beans - cut 2" pieces
  • Baby Spinach
  • 1c fresh basil, chiffonaded
  • 2 limes
  • egg per perspn
  • Canola Oil
  • Salt

Sauce

  • 1 1/2Tbsp soy sauce
  • 1 1/2Tbsp fish sauce
  • 3 Tbsp oyster sauce
  • 3 Tbsp +1 tsp chicken stock
  • 1 Tbsp brown sugar

PREPARATION

Mix sauce and set aside

Preheat a large saute pan over high and add a glug/long squeeze of oil. Add cut green beans, rough shallots and a pinch of salt and stir to combine. Cook for 3-4 mins, stirring until they’re charred on the outside and slightly softened. Remove green beans from the pan and set aside.

Add another glug/squeeze of oil and add the chicken to the pan with a pinch of salt, breaking up the chicken while you cook for about 3 minutes until beginning to brown. Add garlic, ginger, and pinch of chili flake. Continue to cook for about 30 seconds. Add back in cooked green beans and raw spinach. When spinach is wilted in, stir in sauce. Cook for 20-30 seconds or until sauce has reduced a bit. Remove from heat and stir in basil and juice from the limes.
