  1. Pasta:
  2. 1.5 c Allpurpose flour
  3. 0.5 c Semolina flour
  4. 2 Large eggs
  5. 2 Large egg yolks
  6. 1.5 t Salt
  7. 1 T olive oil
  8. 1 T hot water
  9. Filling:
  10. 1/4 t Nutmeg
  11. 1 c Ricotta
  12. 1 c Gruyere cheese (grated)
  13. 3/4 c Parmesiano-Reggiano cheese (grated)
  14. 1 Large egg
  15. 1/2 c Heavy cream
  16. 1 T Parsley
  17. Salt & Pepper
  18. Pasta:
  19. Put dry ingredients in a large mixing bowl
  20. Mix the other ingredients in a smallery bowl.
  21. Make a well in the dry ingredients and mix in the wet ones slowly.
  22. Knead for 15 by hand or 10 minutes on low in a stand mixer with dough hooks.
  23. Shape into a 1.5" think disk and cover with a bowl over a clean towel and let sit for 1 hour
  24. Filling:
  25. Put the cheeses, nutmeg, parsley in a bowl and mix in the cream and egg with a fork or wide whisk.
  26. Season with salt and pepper and refridgerate until the dough is ready
  27. Roll out and fill pasta
  28. Boil carefully in salted water for 6-10 minutes (Have to go by taste here)
