- INGREDIENTS:
- 2 tablespoons olive oil
- 1 large yellow onion, chopped
- 1 carrot, peeled and chopped
- 1 celery stalk, chopped
- 3 cloves garlic, minced
- 1/4 cup finely chopped flat-leaf parsley
- 1 duck (about 5 pounds), cut into 8 small pieces and most of the skin removed, or skinned and boned and cut into small pieces
- 2 bay leaves
- 4 fresh sage leaves
- 3 whole cloves
- 3 cups dry white wine
- 1 cup tomato sauce (optional)
- 2 cups chicken stock + more as needed
- Salt and freshly ground pepper
- 1/2 teaspoon ground cinnamon, or to taste (optional)
- For serving:
- 1 pound fresh or dried bigoli, or any whole wheat pasta or gnocchi, cooked
- Grated Parmesan, or Grana Padano cheese
