  1. INGREDIENTS:
  2. 2 tablespoons olive oil
  3. 1 large yellow onion, chopped

  8. 1 duck (about 5 pounds), cut into 8 small pieces and most of the skin removed, or skinned and boned and cut into small pieces
  9. 2 bay leaves
  10. 4 fresh sage leaves
  11. 3 whole cloves
  12. 3 cups dry white wine
  13. 1 cup tomato sauce (optional)
  14. 2 cups chicken stock + more as needed
  15. Salt and freshly ground pepper
  16. 1/2 teaspoon ground cinnamon, or to taste (optional)
  17. For serving:
  18. 1 pound fresh or dried bigoli, or any whole wheat pasta or gnocchi, cooked
  19. Grated Parmesan, or Grana Padano cheese
