Thai Dragonfruit

INGREDIENTS

  • 140g Thai chilis
  • 240g Dragon fruit
  • 1 carrot
  • 1/2 red onion
  • 3 c garlic

PREPARATION

  1. Pulse carrots, onions, garlic until finely chopped in food processor

  2. Add in fruit and chilis blend until paste

  3. This one made 535g of paste so we added 2% by weight of salt - 11g - mix well

  4. Trace around the base of the ball jar and cut out a piece of parchment.

  5. Pour in mash, cover with parchment and fill a ziplock with a tiny bit of water and put over the parchment to keep it down tight.

  6. Cover with the fermenation lids according to directions
