  1. Notes:
  2. 425 is waaaay to high.
  3. lower to like 300 degrees with nice thick slices
  4. Cut 2 lb onion into 1/2 in thick leave outer
  5. Brush pan w/ oil roast 1 hr one side 30 min on the other.
  6. Let cool and serve with a vinegrette w/ some crushed red pepper for heat
  7. vinegrette:
  8. olive oil, oregano, balsamic, pinch sugar, crushed red pepper, salt, pepper.
