- 2 lb sausage crumbled
- 1T fennel seeds toasted/crushed w/ mortar & pestle
- 1T hot pepper flakes
- 1 red onion finely chopped
- 1 fennel bulb trimmed cored finely chopped
- 1 carrot fine dice
- 1 rib celery fine dice
- 4 c garlic thin slice
- Crushed toms
- Fresh thyme
- Pecorino cheese
- Cook sausage rendering fat
- Add everything but cheese and cook until well browned.
- Add sausage back in w/ tomatoes
- Simmer 20 min
- Serve w/ pasta & cheese
