  1. 4 meaty lamb shanks
  2. Salt n pepper
  3. 6 T evoo
  4. 2 red onion 1/4 inch dice
  5. 12 c garlic
  6. 1 navel orange in 8 wedges
  7. 2 T chopped fresh rosemary
  8. 1/2 cup gaeta olives
  9. 1 c dry white wine
  10. 1 cup basic tomato sos (toms/onion/thyme/shred carrot/garlic/evoo)
  11. 1 cup chicken stock
  12. Zest of 1 navel orange ( a different one )
  13. Oven to 375
  14. Salt pepper and sear shanks in hot oil 15-18 min
  15. Set aside
  16. Onions garlic and orange wedges cook until soft 8-10 minutes
  17. Add rosemary olives wine, tom sos, stock
  18. Braise in oven 1-1.5 hours
  19. Rest in sos 10 min and serve
