  11. - 525g flour (~125g whole wheat flour, 400 AP)
  12. Saline:
  13. - 50g warmed water
  14. - 3/4T salt
  15. Mix leaven+water+flour : rest 30min to 4hours
  16. Fold every 30 min for 2.5 hours
  17. Rest 30
  18. Shape
  19. Rest 30
  20. Proof in bowl add to fridge
  21. Sunday am:
  22. take out
  23. heat dutch oven 1 hr at 500 F
  24. Score, put in covered
  25. bake 20 min
  26. reduce temp 450
  27. bake 10 min
  28. Remove lid bake 25 min
  29. Bake 10 min then open oven
