## Smoked brisket notes ### Ingredients - tri Tip - salt - rough cracked pepper - granulated garlic - onion powder - 1 head garlic - 2 sticks butter ### INSTRUCTIONS #### Morning of Trim fat and season both side liberally Put on a rack inside a sheet pan uncovered in the fridge #### Smoker Put the tri tip in the smoker at 225 and pull at 125 While this is smoking for about 90 minutes - chop up the garlic and melt with the butter for searing #### Fire up grill super hot Grill for about 7 minutes on each side basting with the galic butter until the internal temperature is 135 degrees at the thickest part.
